Incase the bag has swollen up then it is because the coffee is giving out the carbon content, meaning the beans are not as fresh as the retailers promised. However if there is no puffed up air inside the zipper bag then you should likely go back to the retailer whoever sold you the coffee when you are out of stocks.

This process is also performed on an industrial level to ensure that the top class quality of the coffee beans. However the zipper bag is something more home based experiment to know the how much fresh is the coffee that you drink everyday. While preservation of the beans is an important part one must also be careful that once a container is opened then it should be finished within two weeks.
